We pick the model for each use case, not the other way round. The criteria are written in the specification:
- Quality on your own examples, tested before development.
- Cost per task at your expected volume.
- Data location, with a preference for processing in the European Union.
- Reversibility, so the model can be replaced without rebuilding the solution.
